Simple soups for a livesimply lunch

Broccoli soup: Serves 4

Chop up 2 heads of broccoli and put in a saucepan.

Add enough cold water to cover the broccoli.

Bring to the boil and simmer until the broccoli is cooked.

Once cooked, blitz up the broccoli with half of the cooking water/stock you’ve made until smooth.

Season well with salt and pepper and enjoy!

Vegetable and Lentil: Serves 4

A simple lunch to help livesimply

These recipes were provided by Lucy Harrison, from CAFOD's community fundraising team, as part of her promise to livesimply.

She says: "These are just two recipes, you’ll have your favourites as well – share them with your group, and if you let us know them, we’ll share them with other groups who have also taken the livesimply challenge."

Sauté 1 chopped onion in some olive oil.

Chop 1-2 sticks of celery, 2-3 carrots, ½ turnip and 1 leek and add to the onion - cook for 5 minutes.

Add 3oz of lentils and 1½ pint stock (vegetable or chicken stock cubes are fine) - bring to the boil and then simmer until the lentils are cooked.

Liquidise and then add a splash of milk and a squeeze of fresh lemon juice.

Season with plenty of black pepper.
